STRAWBERRY MELLO - STILL OR BUBBLY
The Mello Family of fruit wines is a perennial favorite at SpringGate both sparkling and still. Strawberry Mello takes fresh juice and infuses it with a wine to create a fruit explosion on the palate and nose, This sweet wine is intentionally a low ABV wine of around 8 percent.
This wine is normally available year round, and especially May-August, where it is featured at our Strawberry Festival in June. PAIRING SUGGESTIONS AND RECIPES

2017 Cases: many Alcohol by Volume: 8% Residual Sugar: 9% Fruits: 25% Fresh Strawberry Juice, 75% Apple Wine Sparkling: Capped Still: Corked (coming soon, twist cap) Estate Grown: No Local Farm: Yes, Pennsylvania & New York VINIFICATION AND BLENDING The De Chaunac grapes are hot pressed to maximize fruit expression and fermented in stainless steel. The normal Spring Gate, racking, cold stabilization, and filtering is applied. Malolactic fermentation (MLF) is completed in this red wine to soften the wine’s mouthfeel. During blending, the smallest amount of white wine is added to enhance the fruity aromas. Then, carbonization is performed prior to bottling. COCKTAILING As with many of the Mello wines, this wine is many times used as the basis of a cocktail with the addition of vodka, triplesec, or gin with the addition of fresh strawberries, or strawberries and lemon. In addition fresh strawberries soaked/infused with Strawberry Mello (aka "drunken strawberries") is also popular as an addition to everything from ice tea, to more traditional cocktails. |
