VINIFICATION AND BLENDING
This German style vinification is about pressing Pennsylvania grown Chambourcin and hyperoxidize the juice (to help remove phenols - yielding a cleaner finish and better age ability). The clarified juice is chilled and inoculated with specific yeast cultures. The wine ferments over a period of weeks until it naturally finishes. After settling for several months, it is filtered into bottling tanks, sweeten with cane sugar and sterile bottled. Our goal is to maximize the fresh fruit aromas through the use of cool fermentation and minimal handling.
